in my opinion I found or heard the following are easy; however, this is subjective.
Psych 100
Soc 100
Econ 121
Ger 123
Hist 106
The "classic" Lithuanian studies
If going taking organic chem try and get Dr. Crich
Ask your friends, for more suggestions
