Chocolate should work - I grew up on a farm and we always had problems with mice. Bournville chocolate worked better than anything else we tried.

The very best is Peanut butter. Not only do they love it they try to eat it and get stuck there for the split second that it takes for the trap to snap. Other items they can steal off the trap and excape.
I have caught many mice with peanut butter. They are drawn to it.

Our mouse liked peanut butter on bread. It got four lots off traps before we got it!

Cheese should work, as will almost any kind of nut like pecan, walnut, etc.(unsalted and unflavored).
Does the trap stay set or is it tripped? If it is always tripped with the bait gone, you may have something larger - like a rat or squirrel. You will need a different kind/size trap if so.

I always found chocolate to be best. You can soften it slightly and then it sticks to the prongs really well, so that the mouse can't get it off without triggering the trap.

peanut butter is THE best, but make sure you smear it on the trip lever real good. sometimes the mouse can take the bait without tripping the lever.

If you found that you've got mice because they started eating things in your larder or cupboards, the best thing to put in or on the traps is a sample of whatever they have been going for!
