The have both polar and nonpolar sections to the molecule to help control what may pass.

Phospholipids consist of a polar and nonpolar known as "heads" and "tails". They are located inside the cell membrane to help w/ selective permeability. Also the polar "head" absorbs water and the nonpolar "tail" doesn't.
