I'm not sure if it's water I am hearing, but it's irritating. I know that something is wrong, just not sure what.

Initially, the most common problem is the rubber "flapper" is badly wore. It is located at the bottom-center on the inside on the tank. It is allowing the water to leak by gradually and when so much is gone, then the float will "call" for more water to fill up the tank level. Very easy job to replace the flapper. A quality one costs about $7 at you local hardware store. Just shut off the water to the tank, flip of the old flapper, install the new one and adjust the chain so it has just a little slack in it. Turn the water back on and try it out. Budah, budah, bu-that's all folks....

Check the flapper. They do get worn and have a tendency to "curl". This prevents a good seal and the water leaks into the bowl. When the water gets low enough, the ball drops and turns the water on to refill the tank to its' proper height. You can get a new flapper at Home Depot for under $7. Very easy to install. Just follow directions on package.

Maybe it is trying to get some fresh air when you're not in there sitting on it and handling your nasty-smelling business?

More likely, the flapper is not closing completely in the mechanism that makes the toilet flush. Take the top off the toilet, and see if the seal looks good or if there are some gaps.

This indicates that the vent to your toilets is blocked and is attempting to vent through the toilets. The suction even began to drain the bowl. Snake and clear the vent.

Sounds like your system is siphoning. This can happen when the toilet is too far from your vent stack. I suggest adding a vent-valve near your toilet.
