Dry the head and shake out the seeds. But why give them all to the animals? I enjoy roasting them and eating them myself!

When the flowers are ready cut the heads off and put them in a paper bag and hang them upside down to dry. As the heads dry the seeds will fall off into the paper bags. You can use the bags to store the seeds in a cool dry place.

just air dry them hang the head and let them dry the seed will lose up and you can take them off with your thumb

Just let them dry on the plant, cut off the bloom and feed away.
