cockroaches eat basically anything, I'd try some cat or dog food (the dried kind) and dark green leafy vegetables. When i was growing up the cockroaches used to carry off the pellets of cat food -I'm not kidding!
lots of ppl have hissing cockroaches for pets, check these refs.

The cockroach will eat ANY kind of food.
Bread soaked in a bit of milk is good...as is any type of leftovers you may have from dinner!
