my guess would be back in the day of real cowboys...riding horses....using the pointed toe instead of a spur to get the horse to ride faster. was easier then a rounded shoe.

Cowboy boots have pointed toes for riding-- so you can easily get your foot into the stirrup. Pointed toes on shoes are useful if you have to work outdoors a lot, putting up fences and so on, around animals that are larger than you and behave unpredictably. Some "real" cowboy boots have rivets on the toes so they can be used as a hammer of sorts.

A country-western music star claimed it was to enable one to squash roaches in the corners of a room.
It might be that it made the boot easier to slide into a stirrup. However, the majority of cavalry boots in the world's military before WWI did not have pointed toes.
In my seldom humble opinion, it is probably a tradition, based on a fashion fad, based on the utilitarian original.
