The full saying is 'don't count your chickens before they are hatched'. It basically means you shouldn't get ahead of yourself and start counting the rewards before the actual work is done.

It means not to assume that something's happened before it's actually happened. For example, imagine you're pretty much convinced you're getting a promotion and start spending lots of money. That's counting your chickens before they've hatched, cause it may not actually end up happening.

It just means that you don't know how many of the eggs are going to hatch into chickens so don't count all of them until they are done hatching. So this applies because you shouldn't count things you may have until you actually have them.
