Some scholars say that China or some where in Asia, were the first to do that. And then it was passed on to Europe and they really went for that Idea in a big way. But its still up for grabs as to where it all really started for to many countries want to take credit for it..................... As for me I believe that the answer has been lost in time never to be know by mankind again..............

St Toad is right, I think it has to do with a guy named Jack that lost/had his head cut off. He used a turnip hollowed out with a candle in it to search for his head, Hence Jack O Lantern. Eventually it became a pumpkin

Ireland, and it was originally a turnip. After the Americas were discovered and pumpkins were brought back, the pumpkin eventually became more popular. It's a lot easier to carve a pumpkin than it is to carve a turnip.

Ireland as the legend I heard was a fellow was returning home one night eating a turnip and it was getting dark so he carved out the turnip and stuck a candle in it to light his way.
