You don't put on 10 oz because your body uses up the calories also its not classed as junk food because it goes towards making muscles stronger as its a protien .

You put on weight as fat. The weight of the steak isn't all fat. An 11 oz. steak should be somewhere around 700 calories. Fat is 3500 calories per lb. This means that if you convert every bit of the steak to fat, you'd gain a fifth of a pound. In reality, you burn some calories before they have a chance to be converted so if you've been active, you might not gain anything at all from the steak (you surely will if you add a potato and dessert).
I didn't get into the bit about how you obviously don't eat the bone and some of the meat isn't absorbed during digestion because it wasn't the point that I was making and other answers already explained it well.

Because a large proportion of the meat contains water. If you sat on stool, which was positioned on a set of scales, you would notice that as you ate the meat, you would stay the same weight (unless you ate the meat from a table away from the scales, in which case you would actually put on weight).
Bizarrely you would not necessarily put on 10 ounces because as you ate the meat you would perspire. So by the time you finished your small piece of steak you might only put on 9.9 ounces.

You will weigh 10oz more right after you eat it. Your weight gain over time will depend only on the calories absorbed; the rest is eliminated as waste.

u wudnt..
for example u have a stone of 20 kg..u crush it into tiny pieces..just like tht, when u eat food, after the chewing process its weight will be gone down..and again they are mixed with chemical that break them into furthur smaller molecules n this decreases the weight more
