1. Regular water changes - once every week or two if you can. This replenishes vitamins and minerals and removes waste and toxins, and nothing can be better for your fish.
2. Regular vacuuming to remove waste from gravel will ensure you don't get too much of a build up. To make things easy, do a portion of the gravel with each water change (it isn't necessary to do all of it every time).
3. Make sure equipment is working properly. When you clean out your filters make sure you don't destroy the bacteria with chlorinated tap water - clean them in a bucket of aquarium water. I prefer filters that allow you to change some and not all of the media (non-cartridge based) so that you never remove all of the bacteria in the filter at once.
4. Don't start adding all sorts of additives that the pet store might try to sell you. Keep it simple and add nothing except conditioner. Complicating things only increases the number of things that can go wrong.
5. Fish don't need as much food as you think they do. Mature fish don't even need to eat every day. Fish are cold blooded and unlike warm blooded creatures they don't use their energy to heat their bodies, so they thrive off less and can go much longer without. (If you go away for the long weekend ignore those pollutant 'weekend feeding blocks' and just leave them)
The main thing is to keep up the regular maintenance - filters, vacuuming , and water changes - this will keep the water stable and conditions healthy, and won't give the tank a chance to degrade
Last and not least, make sure you know about the species you keep and keep them properly. Keep schooling fish in schools, don't mix incompatible species, and make sure all of them are suitable for your aquarium size, tankmates, and decor.

General guidelines for any type of fish:
1. Feed your fish 2-3 times a day in such amounts the fish will completely consume in a few minutes. Anything in excess is overfeeding which is harmful for 2 reasons: Your fish may die or get sick due to bloated intestine, and left-over food will cause water pollution.
2. Change 10-20% of your water every week. Use anti-chlorine solution (5 drops for every 1 gallon of water) to neutralize chlorine and other harmful chemicals in our tap water.

Another tip when doing your water changes.
The easiest way of doing maintenance is by using a siphon. It is what it is; a tube you submerge into your to funnel water and waste out with. You can find cheap ones at your local pet store, but they require you to create the suction action. Or, you can buy the slightly pricey ones that hook up to your kitchen sink/faucet that will do the suction AND filling of water for you. When using the siphon, your object is not only to remove the water for the change, but to **dig into the gravel bed and remove most-to-all of the waste that hides beneath. If you don't remove it, water changes make no difference what-so-ever.
Oh...and..
Always change your filter cartridge every 4 weeks. Once its submerged into water, it only is effective for those 4 weeks. (occasionally can be pushed to 5, but why push it?)

- do not overfeed. This causes bacteria growth.
