Cows do lay down and often to sleep. Horses lay down as well. Usually larger herd animals do not lay down for long periods like we do because it is hard on the hear and lungs. But, mostly because they are prey animals and need to take flight quickly if a preditor decides they look good for dinner. They are also equiped with a check ligament that locks the joints while sleeping and standing.

Despite popular belief, whilst cows may nap for short periods of time standing-up, prolonged sleep is always laying down in a prone position,
and horses only lay down when they are ill.

Most of the time they don't. It's horses that do, and they sleep standing because it's harder for them to breath when they are laying down.
