The same reason would apply to teaching fields. Why are most primary and secondary educators women? Why are most English teachers women? Why are most upper math teachers men? Why are most construction workers and farmers men? It has a little to do with society. It has a little to do with natural tendencies regarding interests. It has a little to do with physical capabilities. In short, there is no short answer. It is a combination of things. Women are going to do jobs they enjoy. If a woman does not enjoy engineering, she will not do it without regard to her capability. If a man does not enjoy cooking, he will not do it. I know from experience. I can cook well. It tastes good. I hate cooking. I will not do it if I can avoid it. I eat re-heated stuff and pre-processed stuff to avoid cooking. Women are no different regarding what they will do versus what they can do based a little on enjoyment.

Because men seem to think in a straightforward manner and women tend to think outside the box. Where a woman may have a perfectly wonderful and useful engineering problem solved, a man will have put the problem into a box and delegated several subcommittees to fix the problem. By the way, I am a man who tends most of the time to think outside the box.

That's changing. Quickly.
40 years ago most medical students were men. For the last ten years, though, women have outnumbered men in medical school. And.....the gap is getting bigger.
In engineering, the population of female students is rising. 20 years ago they were single digits percent of the student pool. They are quickly approaching 30 percent, and signs indicate that within 20 years it will be 50-50. The only area of engineering that is lagging behind is chemical engineering. Ultimately, it will catch up too.
Don't fret the difference. It's going away.
