They are called Lucid dreams and you are actually awake in your dreams therefore you can control what you do or say.

Sure, I do all the time. If I realize I'm dreaming I can even change the whole setting like where I am and who I'm with. I've even been able to re-wind my dreams. If something happens that I don't like, I change it. If I like what happened, and want to do it again, I just close my eyes (in the dream) and restart it. If I wake up (as long as I don't get up and move around a lot) I can pick up in a dream right where I left off. A few times I've been able to concentrate on coming up with an answer to a question in my dreams(before I go to sleep) and it comes true. I did this for a friends pregnancy.

I had a great dream on time where I could fly.

It was like taking off on a water ski but it was into the air, that same angle of leaning back against the resistance of the water using the pull of the rope. I just sort of 'air stepped' into the air.

Sometime when I'm just waking up and still in a dream but conscious of it, I feel I can direct the action.
