Granite Do's
Do clean surfaces with mild detergent or stone soap.
Do thoroughly rinse and dry the surface after washing.
Do blot up spills immediately.
Do protect countertop surfaces with coasters, trivets or
placemats.

Granite Don'ts
Don't cut directly on granite or natural stone; it will dull your
knives. Over time, you could mar the polished granite surface.
Don't use abrasive cleaners.
Don't allow water to stand around sinks, which causes
discoloration of the stone over time.

It is not recommended; granite is so strong and durable that it would eventually dull your knives.

Don't use it as a cutting surface, some kinds can get scratched. Hot pots are fine, it's very durable. Not hard at all to keep clean, so most multi-purpose disinfectants should be fine!

pretty much wide open - some lighter colors are subject to tomato sauce stain, grease saturation @ stove, to many acids Will eventually etch, but the only thing harder is a diamond so live it up. There are some that have strength more a-kin to hard marble, you may not want to live it up soooo much.
if you do lots of food slopping, sealing is in order!
