You will die definitely but no definite time. The cause of your death will be mainly due to some disorders or diseases as your body is in malnutrition state. The body needs other nutrients to keep it functionally healthy. Carrot will give you vitamin A (beta-carotene) and some other vitamins and a little amount of fibers.
Large and prolonged consumption of carrot will result to building up of carotene in your blood streams and this will turn you to have yellow color just like jaundice. Excessive amount of carotene leads to condition called carotenosis which got negative effects to your health.
Gaining better eyesight doesn't require purely vitamin A. It needs other nutrition as well along with it for the system to work effectively.
Obviously, human system is different from a bunny and there are specific nutrients required to sustain life thus just eating carrot will put your health into a great compromise. Do you know that an excessive vitamin A is dangerous? So, just spare your extra carrots to bunnies - they will appreciate you for doing so.♥

Carrots contain vitamin A, which helps you see better in the dark. It doesn't give you better eyesight, just better night vision.
I agree with the others who say that you need a balanced diet, it doesn't sound to me as if you are actually considering eating solely carrots, but it's definitely not a good idea. Eat carrots by all means but make sure you eat other foods too

Ignore the other answers and look at this first please, as it isn't as simple as turning orangy colour. Too much of a chemical in carrots is Very Very Bad for Health and can lead to severe complications. Also, vitamin A only improves eyesight when mixed with other chemicals, just like any other healthy vitamin or chemical. Only a combination of these will work, so eating carrots solely will do much more harm than good.

You probably won't die by eating carrots because you physically could not eat enough, but you could suffer from Vitamin A poisoning. A guy in Tokyo once committed suicide by drinking enormous amounts of carrot juice.
The eyesight thing is just a Second World War myth. The British wanted to hide the fact of radar, so invented the fiction that carrots were responsible for their pilots being able to see Germany bombers at night.

You will not get better sight. But you could get a bit of an orange color in your skin.
That happened to Susan Dey when she was on The Partridge Family. All she ate was carrots for a while, and her skin turned orange.

specific. reliable nutrition, no longer all fried stuff. Lean meats, constructive salads and vegetables. no longer continually issues like fish sticks & mac & cheese. Treats, like visits to the Dairy Queen, or to McDonalds could be a now and lower back ingredient, no longer a daily ingredient. turn off the television, have the youngsters outdoors interior the backyard, working through the sprinklers or something relaxing and lively. one ingredient I hate to work out (puppy peeve) is an obese parent, bringing their toddler to a cafe and letting the youngster have a super plateful of fried meals, and then actual that off with a super strawberry shortcake. no longer basically giving that to them, yet to motivate them to consume each chew.

My Aunt went on a diet that included one pound of raw carrots every day and after a few weeks her skin started to turn orange. I have photos to prove it, we still take the mick now!!

You would probably turn orange. My GP remarked that my daughter had an Orange nose and asked if I was giving her carrots. I said no, she did occasionally have baby food our of the jar, but mostly I made her food myself and she was still being breast-fed. Nevertheless, he had made me think, and lo and behold! No matter if it was, chicken, spinach, turkey or beef, the one thing all those pots contained was - CARROTS

You would have fantastic eyesight, beautiful eyes and look orange all over !!! It's the vitamine 'E', you see ? I don't know if you would die of hunger ut you would certainly not live very long. YOu need a lot more than vitamine E to survive !!
