You can shim the LVL up from the pier with wood, but it should be pressure treated wood. The thickness of the shim shouldn't be more then the Beam's height. To ensure the wooden shim's don't settle, it would be better to use a steel flat shim, and stack the steel shim to whatever height is needed. After shimming the LVL, grout around the steel shim with concrete to keep them from moving. Good Luck

as many as you need, 8', 12' ??? it's called a beach house.
I've built decks partially over dirt & a sloping patio... you just scab onto the joist, lift it level & shoot it.
Same principle, if you have to go more than a few inches put extra "x" bracing / solid blocking between joist in this area to tie together!
