For a while there was a possible link between aluminium and Alzheimer's and/or other forms of dementia.

The rise in breast cancer in the USA is also being attributed to the aluminium zirconia in antiperspirants.

However, all that aside, the gray is caused by the aluminium ozxidizing. The heat from cooking accelerates the oxidation so every time you wipe the pots little bits of oxidized aluminium will come off on the rag. The older the pot is the more it will oxidize.
