Blackened cajun fish is any fish (usually a freshwater fish, like catfish) that has been blackened and spiced with traditional cajun spice combinations. That is, the fish is cooked through, but it's been extra crispified on the outside, and will have red pepper, chili powder, black pepper, and the like as the spices.

Goes great with rice or french fries.
