Vinegar contains ethanoic acid CH3COOH and baking soda consists of Na2CO3 (or NaHCO3). Because CH3COOH is stronger acid than H2CO3 the following reaction takes place:

2CH3COOH + Na2CO3 --> 2CH3COONa + H2O + CO2

So, the gas that is produced is CO2.
