Well yes you can actually put text files on the iPod and view them.
However if you want to play around a little bit more then you can install Linux on iPod.

iPodLinux is released under GPL so you don't have to pay for that.
You can not only view files then but can also view html pages.
Also you can also play Doom on iPod. (yes... DOOM on iPod)

Actually that's not true. You can put text files on the iPod by dropping them into the Notes folder on the iPod.
