Use a tracer program.

Outlook incoporates one of these in the form of a read reciept

Message Options > "Request a read reciept fo this messge"

Not sure if you will be told if the message is forwarded to someon else but you can try it anyway

Tell her to change her password!!!

Your friend may have an authorised keylogger having access to her computer which is extremely dangerous (and obviously illegal).
Ask her to get an expert to check your computer out at:

Register, go to the Hijack This Forum, read the instructions on how to post a log, give a brief description of the problem (like you've just typed) and post a log there. The guys in there are fantastic and trustworthy and will guide her through in getting rid of anything nasty from her computer. Good luck!

In the meantime, maybe she should get a temporary webmailed based email account and see if that other person can still see her mails.

make sure you are sending them to the correct e-mail and that the person using it doesnt share the address with someone else
