The simple asnwer is that coating a metal like iron with a more reactive metal like zinc stops the iron from rusting. The zinc corrodes instead, and supplies all the electrons needed by the oxidising agent present (wet oxygen). As long as the zinc is in elctrical contact with the iron, the iron can't rust.
