"22 carat" gold is a mixture of 22 parts of gold and 2 parts of a harder metal than gold. "14 carat" gold is a mixture of 14 parts of gold and 10 parts of a harder metal than gold. The hardness of the mixture just comes from how much metal of each hardness is in it. Yes, 24 carat gold is the softest of all.

I'm not really sure why, but I have been told 10 carat is the harder metal. If it was a toss up between 14 carat and 10 carat...get the 10 carat because it does not bend so easily. I once had a picture framed in a gold frame. I thought it was just a gold color that matched the picture. When I went back to pick it up, and they told me the price of the framing, I freaked. The gold frame I had chosen was 24 carat gold leaf. It's almost paper thin. It's beautiful. But I may have picked another frame if I had known how much the thing was going to cost.

Yes the higher the carat the softer the gold because there is less metal mixed into it (metal makes the gold harder).
