Malt spirit, Whisky, Scotch are usually matured in Oak Casks. IT is believed that this cask imparts color to the spirit and "matures" it. Can you let me know the components in spirit undergoing a change?

The oak has already been used once (eg sherry production) and fired out with a hot charring flame. The maturation is extremely complex and introduces more than 100 new compounds into the distillate.

These include complex alcoholsl, aldehydes, ketones, carboxylic acids, esters and tannins.

The product? Single malts are highly variable and fabulous
