Im a seller on ebay and the person who won the item is going to pick up the item on monday. I dont really know what to do with the transaction. Will I let him sign a letter that says he received the item? I do know that I should check his I.D with his name found on paypal. What kind of proof should I make that shows that he received the item. I dont want a scammer foolind me saying that he didnt received the item even if he did.

First off I hope you're meeting in a public place, but that's totally different.
You can usually pick up at office supply stores a booklet of cash receipts (get the carbon copy type). What I do is fill out all the information on the receipt to show what the item was, the eBay item number, and the price. Simply have them print their name and eBay id and sign the bottom of the receipt.
If you really feel that this person would try to scam you and say that they never got the item even after picking it up in person, maybe meet at a local copy shop and tell them just for your records could you have a copy of their id? Just a suggestion.

Sounds like signing a recipt with name and address on it and checking ID should have you covered. But please go to Paypal help and ask them directly . It is probably safer to accept cash ! Paypal can be a nightmare if someone says the did not receive something htey will put a hold on your funds even if you have proof , it can take weeks to get it resolved.
Best bet - cash , and make sure you have someone else there as a witness .
