Personally I've only heard it referred to as a water heater or the hot water tank

hahaha. I never thought of that. I guess because it's a heater that makes water hot... never mind. There is no explanation. It is just one of those stupid modern english things

Cuz thats what they are! It maintains a certain temp all the time, and as you use the hot water, more water fills the tank, (cold) which heats up to the required temp!
