wow! the answers you are getting are so typical of American mythology. all the people who are being named by other answerers to your question are either hollywood superstars who played cowboys on tv, or they were famous robbers, murderers, and gunfighters, or they were circus performers!
people buy the image but they don't realize that the act is not the same thing as reality. the truth is that cowboys were almost entirely mexicans or spanish americans. they mostly didn't get any more famous than any other farm or ranch worker ever would.
Gene Autry was really the beginning of the mythology that white americans were cowboys and he entertained a generation of kids in the 50's, giving a romance to that kind of work that really has very little to do with what life was actually like for cowboys.
there are still genuine cowboys in mexico and other parts of latin america. they spend weeks out on the land at a time, make very little money, and are just as unlikely to get famous for what they do as any cowboy who ever lived in the USA.
Louis Lamour is a famous writer of cowboy and old west stories. you may want to check out some of his books if you like those kind of tales.

I think a lot of the famous people named by earlier respondents were not technically cowboys. True they were figures from the old west who rode on horses and had six guns, but how many of them actually herded cattle any time in their careers?
