There used to be a place called Edward's Cycle over on Cave Creek and about Greenway or Thunderbird. I know that there was a fire a few years back and another company took it over. I can't remember what it's called and I don't know if they still have used bike parts there anymore. There's another place outside of town, on the way to Payson along the Beeline Highway. I believe it's called All Bikes. I went there once like 15 years ago and they had TONS of stuff. Good luck!
