the Nazis? That's what we're told about the terrorists of today in Iraq. Did the Nazis of Germany whine, "We would destroy them if only they were brave enough to fight us in the open, man to man."?

No, that was WAY different. The purpose of Le Resistance was to fight against a dictatorship. The government in Iraq is NOT a dictatorship. The US has NOT taken over.
Two totally different things. Besides, most of the insurgents aren't even Iraqi.
The only way they could be similar is if the resistance in France, for example, had been made up of Dutch people.

The Resistance fighters had a good cause. The terrorists don't. Here's a parallel I'll accept... there's a lot of miseducation and education of hate in the Middle East. The Nazis miseducated and taught hate.

So there you have it.

Cowardly? No. No uniform meant shot on sight as a spy.

Guerrillas usually don't wear uniforms, even if they had them to wear. The Resistance fighters of WWII were heroes in the truest sense of the word.
