well, you use paper and write on it with crayons or pen and call it your diary. What's so hard about that?

I think it's easier to use a needle and thread to sew the binding up the middle, rather than try to staple it in the middle. It also holds up better over time, and makes a more attractive book.
Take however many pieces of paper you want to use. Fold them in half to form a book. I like to use a thicker piece of paper on the outside as a "cover." Oaktag, wallpaper, and glossy print paper all work well for covers.
Then take a needle and thread and poke the needle through the middle of the fold in the paper, then down one side, back up through the middle, and to the otherside, continue stiching up one side and down the middle until you are sure it's secure enough. Knot it and tie it.
Fill the diary with secrets. :)
I used to make tons of journals like this, and I gave away a lot as gifts. A fun way to make a cover is by collaging pictures from magazines.
Just have fun and don't be afraid to experiment!

Forget the stapler and get a strong sewing or darning needle and some thick thread or wool. There's lots of ways that you can bind a book together. There's lots of workshops and books on the subject - here's one example from the internet.

I know it is hard to believe, but analog writing instruments and paper were common just a few decades ago!
