First, make sure that your mail service supports client-side mail programs. Yahoo, at the moment, requires you to pay for this :( but for many others it is readily accessible for free.
Whether your server is a POP3, IMAP or HTTP server will depend. Most mail services support POP3, but check your mail service's help topics on the subject.
The incoming server is the one used by the email client to connect to, check for and download new messages. Yahoo's is pop.mail.yahoo.com, Gmail's is pop.gmail.com. Again, check help.

Find out what type of mail server it is you are connecting to: POP3, IMAP, etc. Then fill in its type and address. Then you can get your mail.
