If a work is already mentioned by a prior answer, please don't mention it in yours. I want to get a big variety.

I'm an Atheist, and I have read the Bible. Why would you suppose that I wouldn't read religious books?

East of Eden by John Steinbeck. So epic, so brilliant, and so awesome. It will wrap you up and won't let you go even after you finish it. Classic good vs evil and so interesting.
The Time Traveler's Wife by Audrey Niffenegger. Only a few years old, but it will be a timeless (no pun intended..) classic to be sure. What an incredible story.
I know someone already mentioned Ender's Game by Orson Scott Card, but I really can't have any sort of list without including it. Absolutely brilliant, and very engrossing. You'll remember those characters for a long time. The sequels are good too.

Since I can't mention any prior works, the one book you should read before you die is: Goodbye, Mr. Chips.
