When I carve my pumpkins, I cut the bottom open and remove the seeds and inside strings from the bottom. I then cut an indentation in the bottom cut part to fit the candle into and then I carve the pumpkin... after it is all done, I place the candle into the bottom that I cut from the pumpkin and place the carved pumpkin over the top... and the pumpkin looks as if it was never opened and the candle has a better fit. It is safer... the only thing is that the candle needs to be at least3 to 4 inches lower than the inside top so the candle flame does not burn the inside top of the pumpkin too badly... They seem to last longer too... but I think to keep your pumpkin fresh looking after it is carved, it needs to be carved no sooner than one week before Halloween. In the meantime, put some black and orange streamers around your home with some ghosts made from hangers and pillowcases with black paper "BOO"s on them... Good Luck!

A hard question to answer since I dont know where abouts you live. I would say that if you are in a climate with moderate temperature, it would be okay to do the carving now.
I live in MN, right now the weather is perfect but next week its going to be 60...I wouldnt leave them in the sun if you choose to do them now and its warmer than 50.
