I found a good source to answer your question.
I use an Apple iMac G5 computer with built-in WiFi and Bluetooth.
802.11 is WiFi and allows computers access to the internet without using wires. Early versions were 802.11a, 802.11b, and 802.11g. These transmitted on different frequencies and had different data transfer rates and ranges and since g and b use the same frequncy, they are backward compatible. Ranges for WiFi are 150-500 feet and 802.11g can transfer data up to 54Mbps. Some router brands claim they can boost that speed. The new 802.11n is about to be released and 802.16 WiMax is planned to possibly replace WiFi, which will allow broadband speeds.
Bluetooth is also wireless and has a short range out to 30 feet. My iMac has a bluetooth mouse and keyboard. Standards are 1.1, 1.2 and 2.0 for now. These allow for different protocols, such as hands-free and enhanced transfer rates for cellphone use. I have also used a bluetooth headset. Another use would be for wireless printers.

802.11 is a standard protocol for wireless communications, or what most people cal WiFi. This allows you to surf the web and get your email from Starbucks coffee, McDonald's, the airport etc.
The Bluetooth is also a wireless communications protocol used to communicate with other devices, like your cellphone. This can be used to dial a number on your cell phone from your contact list on the pocket PC. Or have a picture and contact information pop up on the pocket PC when someone calls you.
