If it's a topical chat show, usually the day before, sometimes even that afternoon so the very latest events can be discussed.
If it isn't topical they usually record around 5 shows in one go once every now and again. In between shows they ask the audience (who have got in free) to change seats for obvious reasons.

The evening shows are taped in the afternoon for showing that evening.
Daytime shows are taped anywhere from a week to a month ahead of time.

I think I heard somewhere they only have to tape for three or four months at a time. (a year). They tape several shows a day, even though we only see one a day.
Reruns are all during the summer.

a friend of mine was on Jenny Jones show once... the show taped like 3 months before it was on TV

They tape many shows in one day and divide them up. We also see a LOT of reruns on these.
