The Cambrian seas saw the evolution of most of the extant mollusc groups, including Pelycopods, Gastropods, Polyplacophorans, and by the late Cambrian, even Cephalopods.
There were also several groups of molluscs in the Cambrian that have no living descendants, or their relationships are unclear, such as the Stenothecoids, Helcionelloids, Paragastropoda, and the Rostroconchia.

They wouldnt be loved by the molluscs of today.
I think they would mostly be squishy, but quite tasty.
