I'm guessing you are looking for something more than just a salad, which of course can be ordered at any restaurant.
I can only think of a couple of completely vegetarian restaurants, Rainbow's End and Go Raw Cafe.
Rainbow's End is a cafe and health food store at 1100 E. Sahara (nr. Maryland Pkwy). They aren't open late and are closed on Sundays. The atmosphere is laid back and the food is really good.
There is a raw vegan restaurant called "Go Raw Cafe" with two locations. http://www.gorawcafe.com/
I haven't tried this place, but it's supposed to be really good (AND it's vegan).
Gandhi Indian restaurant
(Flamingo and Paradise, in a shopping center across from Terrible's Casino). Vegetarian options.
There is a PF Chang's on Paradise at Flamingo (across from Terrible's, next to the gas station). They have a pretty good vegetarian selection, enough for a decent meal.
Komol Thai, on Sahara, (x. street Commercial Center Dr, a few blocks from Rainbow's End). They have a large selection of vegetarian options.
Viva Mercado's, a Mexican restaurant with a good amount of vegetarian items on the menu (the beans are vegetarian, but the rice is cooked with chicken broth). The last time I was there a few months ago, they were on Flamingo at Jones, but according to the website, they are moving. http://vivamercadoslv.com/index.html

I just find it so ignorant when people recommend salads to vegetarians. Sorry.
Basically, everyplace that you go will have something vegetarian on the menu or will be able to make something for you. High end places may not have something listed, but you will not be their first vegetarian to visit so they are usually prepared with something. Mid range restaurants almost always have something on the menu directly. The big exceptions would be good ole boy steak houses and seafood houses. But, if you are vegetarian, you probably know better than to even try those places unless you want to be stuck with mashed potatoes, salad, or buttered pasta.
Italian Restaurants will usually be your safest bet. Nearly every single one will have a simple pasta with marinara or tomato sauce that's vegetarian. Most will have something even more elaborate like a lasagna, ravioli, or gnocchi with a special sauce.
Heck, you could even visit In N Out and get their 'Grilled Cheese' animal style, fries, and a shake. Mmmmmm.
Well, good luck to you and never be afraid to ask the host or manager, before you even sit down, what they can do for you.

If you're looking for just vegetarian dining and not risking having your food cooked on the same grills as that of the meat choices, I would suggest that you try any of these places: Go Raw Cafe located at 2910 Lake East Drive, Raw Truth Cafe located on E Windmill (sorry I cannot think of exact address) or my personal favorite, Long Life Vegetarian Restaurant located at 4130 S. Sandhill Rd. Of course you can find meatless selection at any of the buffets and such, but if you're wanting a main course that is truly vegetarian, Long Life is great!

Go Raw Cafe on the West Side of Vegas. They specialize in raw food meals.
A little less pricey would be Whole Food Markets in Summerlin or Green Valley.

Go to yellowpages.com, select Las Vegas for the city, and then just type in "vegetarian restaurants". It'll come up with a whole bunch of categories, your best bets will be in "restaurants-health foods" and "restaurants-indian".

Outside there might be some grass and trees....haha ok seriously most resturants serve salads and are willing to change a dish to meet dietary needs if it's possible
