Matter is the clumps of protons, neutrons, and electrons that, in a variety of sizes, make up the elements of our universe. The bigger the clump, the denser the element. The elements then become compounds by combining with other elements. Everything in existence is the final result of these interactions.
These clumps exist in the phenomenon called, empty space. If you want to go deeper, the protons, neutrons, and electrons, are made up of even smaller particles called quarks, muons, gluons, etc. Who knows what these are made of.
Many forces are at work to keep these clumps together and operating the way their suppose to be. Scientists are still trying to understand all the forces that are at work.

Something of fact, if you believe in the popular ideas of reality. Grey matter is what will fall from space sometime in the distant future and create supernatural powers in the majority of the population, in my opinion, which doesn't really matter (one of the other uses of the word). Who knows what that will lead to?

matter is mostly nothing ... with a tiny bit of something in it
and that "something" may be some pretty weird 11 dimensional stuff ... and a lot of it is dark
and its held apart by something we call dark energy
