Identify what you're priorities are. If it's money, then choose something that will be lucrative. If it's to be happy, choose something that your passionate about. I'd recommend the latter, it will make things much easier when you have to deal with any problems and you'll be happier in general. These 2 ideals aren't mutually exclusive, you can find something that you're passionate about that is also very lucrative.

Beyond that, reach out to people that are already successful in the business you want to get into. You'll need mentors along the way to circumvent the barriers to entry that naturally exist in any business marketplace.

If you have the start up cash, I would suggest a franchise, of a company that has a proved track record.

Take a stock of all your assets... knowledge, market, customers, laws (like taxes, etc.) and decide after that.
