should you not be asking 'what carbohydrates do not contain wheat?' If you take the five food groups in their basic start points(meat/fish. dairy, carbohydrates, pulses and legumes, fruit and veg) you will find that carbs are all that you need to worry about. The problems come up when you buy processed foods (ie sausages, pizza, ready meals). In terms of carbs avoid: Wheat based bread & Rolls, baguettes etc (most bread except rye, and specialist dietary breads), pasta (unless you buy wheat free), Cous-cous, Pastry, biscuits, bakery and cakes (again you can buy wheat free versions of most of these in wholefood shops).
You are best making your own bread and trying out different flours to make things like pancakes (buckwheat flour is used already for griddle cakes for brekkie in the US) and buy wheat free pasta, brown rice noodles and german rye bread for quickness. GLuten free breads are not always Wheat Free, as they are able to remove the gluten but leave the rest of the wheat, so read the ingredients.
You can still have rice, and you'll find a lot of wheat free products contain it instead - but stick to brown rice as its better for you. Try other whole grains instead of rice such as Millet, Quinoa, Buckwheat and Tapioca. Soya flour makes good cakes! All are great in salads.

Fruit and veg - there are 1000's of varieties so try different ones cooked in different ways until you find what you like.
Beans (canellini, borlotti, haricot, black eye etc), lentils, chickpeas, meat (not processed), dairy (if you have digestive probs, eat live yoghurt). Oats, barley and peas.
For carbs, eat rice, potatoes, yams, corn based products.
Most supermarkets & healthfood shops now do ranges of wheat free bread, biscuits etc. Pasta is available made from rice, buckwheat (despite its name, not the same as wheat), etc.
Don't be put off new foods if you don't like them the first time, try cooking in different ways and flavouring with differnet herbs and spices.

Any fresh fruit/vegetables, fresh meat, dairy. Be wary of some yoghurts. Wheat is used in many disguises as a cheap filler/thickener.

wheat free ones :-) If you go to the supermarket many now have free from ranges - Waitrose can give a list of all thier own label wheat free products

everything except breads and cereals and pasta and some crackers and some biscuits. certain processed meats have wheat in them such as sauages and black and white pudding. check the labels on everything.

just about every food you can think of doesn't contain wheat, unless it contains wheat.
for example, tuna and cucumber don't contain wheat.
are you mentally adequate?
