Pull the drain plug on the bottom/side of engine block... reinstall
and pull top hose on engine, get a funnel and fill with a good mixture of coolant... the reason for this is that you may not be able to gett all the water out of you block by draining... and this
way you will be sure to prevent freezing... next go to Auto Parts
store and get some Stabil for your fuel and pour it in your fuel tank this will stop the fuel varnishing... Actually you should do the fuel thing first and run the eninge a little while so it can get through your fuel system and carburetor/injectors etc...

I would have professional do it. I have an '86 Bayliner Cierra that I ran antifreeze through the engine and outboard, but it slowly leaked out and cracked the block. The small cost for it being done right would have saved me $3000. I had it in heated storage for every year before that with zero issues, so I feel that is the best.
