Hendrix's "Hey Joe" and "All Along the Watchtower" are classic examples of someone taking a song and making it their own.

Here are some others I love (original performers in parentheses):

"Walk On By" - Isaac Hayes (Dionne Warwick)
"By the Time I Get to Phoenix" - Isaac Hayes (Glen Campbell)
"You've Really Got A Hold on Me" - The Beatles (The Miracles)
"The Wait" - Metallica (Killing Joke)
"Many Rivers to Cross" - Harry Nilsson (Jimmy Cliff)
"Light My Fire" - Al Green, Massive Attack, Erma Franklin (The Doors)
"Slippery People" - The Staple Singers (Talking Heads)
"September Song" - Lou Reed (composed by Kurt Weill)
"Subterranean Homesick Blues" - Gecko Turner (Bob Dylan)
"Always" - Leonard Cohen (composed by Irving Berlin)
"Sugar Sugar" - The Wailers (The Archies)
"My Favorite Things" - John Coltrane (composed by Rodgers & Hammerstein)
"Strawberry Letter #23" - Brothers Johnson (Shuggie Otis)
"Black Steel in the Hour of Chaos" - Tricky (Public Enemy)
"Helter Skelter" - Siouxsie & the Banshees (The Beatles)
"Dear Prudence" - Siouxsie & the Banshees (The Beatles)
"High-Heel Sneakers" - Elvis Presley (Tommy Tucker)
"Come On, Pt. 1" - Jimi Hendrix (Earl King)
"Wild Thing " - Jimi Hendrix (The Troggs)
"She's Lost Control" - Grace Jones (Joy Division)
"Jump" - Aztec Camera (Van Halen)
"The Girl I Love (She's Got Long Black Wavy Hair)" - Led Zeppelin (Sleepy John Estes)

Just a few off the top of my head...

Iam huge into cover songs. But usually the new band messes the cover up so bad its terrible. The best cover song is Ben Harper's version of "Sexual Healing" uh-maz-ing!
