Well I'll warn you, Thanksgiving can be very busy and crowded at Disney. But it is also a fun time of year with all of the fall and early Christmas decor, shows and events!
If you've never been to Disneyland in CA or the Magic Kingdom in Florida, then I highly recommend visiting there. If you have visitied either before, you may want to skip out because the Magic Kingdom always always always holds the record number of crowds each day.
I love EPCOT and Animal Kingdom. Here are your must sees at each park:
Magic Kingdom:
all of the mountains (Splash, Thunder, Space)
Philharmagic show
Pirates ride
Fireworks show
EPCOT:
All of the countries (great places to eat and shop!)
Mission Space
Soarin'
Maelstrom at Norway
Illuminations night show
Disney MGM Studios:
Rockin' Roller Coaster
Beauty & the Beast Stage Show
Indiana Jones Stunt Spectacular
Twilight Zone Tower of Terror
Dine at the 50s Prime Time Cafe

I always recommend purchasing your tickets from Disney directly. However, two other very reliable locations do offer discounts. AAA offers a discount on park tickets if you are a member and your local Disney store at a mall near you also sells theme park tickets at a discounted rate.
Be sure to stop at a hat shop at the first park you visit and pick up the bride and groom mickey and minnie ears!

I would hit Epcot World Showcase for sure. It is truly like stepping into different countries. Maybe have a romantic dinner in Italy or France, both have excellent places to eat. If it is late enough you could see the evening light show.
But spending the day together at the Magiv Kingdom could also be romantice in a fun way. Riding rides together and seeing the parades.
Or taking int he wild safari at the Animal Kingdom is fun as well. Especially if you are in to nature and animals.
Disney Studios has some great things too, but I don't find it as fun as the other parks.
Fort Wilderness is fun as there is a petting zoo, beach etc.
Downtown Disney has lots of fun shops and entertainment for the evening time with the parks are closed. You could go see La Nouba the Cirque du Soleil show.
I would explore www.disneyworld.com for more ideas and they can give you a general idea on the pricing. Or go to the bookstore and read Binbaum's Guide to Disney World without Kids. It gives tons of ideas for couples.
No matter what you do at Disney World, you will have a great time. Especially on your first anniversary!

Definitiely go to EPCOT--the Christmas decorations should be up b then. If you eat there, go to Le Cellier. Also, try to see some of the resorts. The Grand Floridian is really pretty at holiday time. So is Port Orleans. And see Santa Claus while you're at it. The easiest place to find him would be the Downtown Disney Marketplace.
As for tickets, please go through Disney itself--either disney.go.com, or go to a Disney Store.

I enjoy Epcot and Magic Kingdom. But Animal Kingdom is wonderful as well.
In my opinion, the best place to eat would be Boma at Animal Kingdom Lodge. They have a wonderful variety of african dishes as well as some you will recognize. Then after dinner you can walk around the resort and view the savannah and the animals.
It will be busy that weekend so make sure you utilize the fast pass option.

I would go to Epcot where they have Candlelight Processional. I have the soundtrack at home. It is wonderful. Also, you have to see Magic Kingdom all decked out for the holidays!
I keep telling people about this unusual attraction that starts around Thanksgiving. It is an ice exhibit carved from two million pounds of ice... and you walk thorough it and even slide down slides and stuff. They give everybody a winter coat to wear. It is at Gaylord Palms hotel. They also have ice skating and christmas shows. I know... go to Orlando for the ice! Ha!

I would definitely spend one day at Epcot. The World Showcase has all the different countries to visit- it can be romantic.

awwww! that was how me and my husband spent our 1st anniversary, in orlando cruising theme parks! i really liked MgM and magic kingdom (excellent shopping!). make sure you go to pleasure island and buy plenty of alcoholic beverages, all the mickey mouse sweetness can get old quick and you will need to shake it off a little at one of the nightclubs. have fun!!
