For cooked Items, I wouldn't go past 48 hours. Cheese and milk two days before expiration date. Just cautious, I know!

"Smell it first" is what I've always said. It really depends on what it is. I think one week is a good rule. At my house everything older than a week gets fed to the dogs or thrown out.
