It's true for me. In the olden days, life was simple. You knew what had to be done and did it. These days, there are so many choices and so much variety that it can be difficult to make the right decision. I feel like when I choose one thing, I'm missing out on 100 other things. Yes, variety can create anxiety.

Answer: it depends.
If the variety is ever changing, and nothing ever stabilizies then yes, it will cause stress.
We naturally try to nail things down into schemas that help us make quick decisions about our environment. We take what we have perceived and store it in long term memory. Then we add to this over time. This allows us to create instant, and automatic responses. Without these the world would be incredibly confusing and we would have to stay on hyper conscious alert all the time. This would make us create stress hormones that if poured into the brain regularly can cause brain damage!
So, if by variety you mean that nothing stays the same, yes, it will cause anxiety, and poor health.

Variety creates a challenge, and challenges create anxiety. Sometimes it is worse to have too many choices than to not have any choices at all.

to some people, yes to others, no. variety can complicate life for certain people, like those who never know which one to choose? yeah, then you have a problem, and in tht case simplicity is best.
other times, variety can open up new possibilities, so pick wisely.

I think it does, because when you present more than one choice, it creates anxiety. You always wonder whether the choice you did make was the correct one.

variety is good to keep the mind alert and interested. I think the opposite would breed boredom which breeds stress.

in many instances yes. too many choices often prompt too much time spent comparing options with little regard for what we actually require
