We have an natural oak table. When we bought this table a year ago it had a lovely sheen on it which has since come off due to being wiped daily. What should we put on it to restore that sheen - would it be a wax or an oil and how do you apply it and how often.

A good quality wax polish applied according to the instructions on the tin is the way to go with this one.

If you don't know what was alrady on it then a wax finish is the safest.

As its rubbed off after a year it sounds like wax. Put on a thin coat with a cloth ( of wax, i don't mean put on a thin coat...oh never mind) and then buff to a sheen. Thin coat every 6 months is better than thicker coats which always end up rubbing off on clothes or table cloths.

If it was oil I would say rub in some danish oil using a lint-free cloth and leave to dry, then handbuff to a sheen

Don't be insulted by BILL suggesting you have veneer, he's american, he doesn't know we laugh in the face of veneer in preference to real wood.
