"Celebrity" Chef Anthony Bourdain said, "Work as a dishwasher for six months, before deciding to become a chef." He also said (paraphrasing) "You shortchange yourself if you don't go to cooking school." If you have the money, time and support to go to culinary school, go for it. Becoming a chef used to involve being an apprentice for a number of years, and that process still has some value. If you can apprentice with a number of top chefs for six months or so after receiving your culinary degree, you'll be way ahead of the game.

There is a great show on BBC called "Master Chef Goes Large". People from all walks of life (except professional chefs; some of the "contestants" do own greasy spoon-type establishments, however) get to compete for the opportunity to become a professional chef. There are different rounds of competition, and people are eliminated after each round. One of the rounds involves working in an actual restaurant, which looks really, really hard. It comes on Monday and Tuesday nights at 8:30. I'm 39, and am thinking of the same thing.

ohhhh, my sweetie, at forty anything is possible!!! you are still young enough to change to whatever you wish to be. i think your only problem would be a matter of money. would the switch cause a lowering of your income? could you live with the lifestyle changes that that would cause? would it make you happier? being happy in your work, to me means more than money! i know, been there done that. it is wonderful to get up, get dressed, and NEVER having to say, "god i hate my job!!!" think about it, talk to your family members and anyone else that would be affected by your move......make sure you explain how you feel. good luck

As DaMan said, if you have a passion for cooking, then that's what you should do. At forty, your life is still in front of you. If you don't have mortgage payments and a family that needs every paycheck, then by all means, follow your passion.

You only have one life. Make yourself happy.

If you took a few months to attend a good Chef Training School you could use that in conjunction with your professional career. You could likely get a good position if there is any way your prior career relates to any form of Restaurant/Hotel Management or office administrations within it.

In fact, life just begins to get good at forty!

If you want to change careers, go for it! Do what makes you happy.
