On Happy Days, there was an episode where they had Fonzi water-ski and jump over a shark. After that, the show went downhill. So the phrase "jumping the shark" means the series is starting to go down.

Fonzee. (The Fonz)

In the episode, late in the series of Happy Days, the Fonz was at the beach and a shark was in the water. He was SO cool, he jumped the shark with the surfboard and safely got away.

People said from then on, that Happy Days went down hill.

It refers to the moment your decline begins.
