Well you need to be honest. Don't just make up stuff that you think the interviewer wants to hear, because 9 times out of 10, they will see through you.
You should have highlighted your best strengths, your willingness to learn new tasks, your ability to catch on quickly, your eagerness to have this particular job... etc.

tell them that sometimes, it's best to hire someone with a little less experience, so you can learn it THEIR WAY. Tell them you are always willing to learn and expand your knowledge. No one can ever have enough experience.
if they are looking for a 'go getter' someone who will work hard to get the job done, right, you are their guy. you may not know everything, but you will make darn sure you'll find out what you need to know.
obviously they thought your resume was more than adequate or they wouldn't have had you for the interview. so may add this 'tactfully' to your point. that you have that 'spark' and they must have seen it on your resume or wouldn't be here amoungst the higher qualified candidates.
but really, it's all bullshit. :-)

Ha ha I feel your pain. I have been getting interviews lately and the question I absolutely hate is "what is one of your weaknesses on a job you have had?" Ugh. I never know what kind of Bullshi** answer to give.
For yours, I'd say, because I'm not set in my ways and can still learn and have an open mind. I am anxious to learn, it's easier for me to learn your way of doing things........and you will not have to pay me as much (lol) not sure if you should really say that last part.

You always have to look for the good. Those clients may be older and may not have the vitality you do. You aren't already tainted by the business, ( I wouldn't use that one though.) You are willing to work hard, learn more, your the underdog and I always like the underdog because one day they'll surprise everyone and kick everyone's a**.

I may not be as experienced as the others, but I am smart and a fast learner. Furthermore you can train me the way you want, because I won't have any preconceived ideas about how it should be done. The benefit for you is that you won't have to worry about me doing it "my way" or some other companies way.

they might be experienced but sometimes experience means the person is not open to new learning. tell them, you are fresh and new, and very eager to learn. you have researched their company and think you have a lot to offer. talk about team-working skills, getting along with people, able to learn really fast, and prepared for a long challenging career with them. express the fact that you will be a commited employee.

Because I've dedicated my life to pursuing this career and I have chosen this place as the start because it is superior to all others, like I plan to be someday, through hard work, focus, and continued improvement and innovation, in order to make money for us both.

The world is changing. In a few years, conditions may be so different that prior experience is irrelevant. In that case, my {fill in your strengths} could prove to be much more valuable to the company.
